Gli scienziati sanno da tempo che il sulforafano e la quercitina sono potenti antiossidanti ricchi di benefici per la nostra salute. Ora i ricercatori dell’Università di Warwick in Gran Bretagna, hanno scoperto il meccanismo con cui queste sostanze attivano una speciale proteina che protegge e favorisce la salute delle cellule.
Lo studio è stato pubblicato sulla rivista Antioxidants & Redox Signalling.
 I risultati della ricerca possono condurre all’identificazione e allo sviluppo di nuovi farmaci o integratori per prevenire le malattie croniche come il diabete e le malattie cardiache. La ricerca si è concentrata sull’attività di una proteina nota come Nrf2, che è costantemente in movimento dentro e fuori dai nuclei delle cellule umane al fine di monitorare la loro salute e vitalità. Quando la salute di una cellula viene minacciata, Nrf2 comincia ad oscillare dentro e fuori la cellula più rapidamente per stimolare i meccanismi di difesa delle cellule e portare ad un aumento dei livelli di antiossidanti cellulari. 
“Il modo in cui Nrf2 funziona è molto simile a quello dei sensori in dispositivi elettronici che si basano sulla continua rivalutazione del loro ambiente per fornire una risposta adeguata “, ha spiegato il Prof. Paul Thornalley, autore dello studio.

Nel nuovo studio, i ricercatori hanno scoperto che, in circostanze normali, Nrf2 oscilla dentro e fuori un determinato nucleo cellulare, al ritmo di una oscillazione ogni 129 minuti. Se la cellula viene esposta a prodotti chimici, gli antiossidanti sulforafano e quercetina, aumentano il tasso di oscillazione di Nrf2 fino a 80 minuti per ogni oscillazione.
Il sulforafano è un antiossidante che si trova in abbondanza nei broccoli, mentre la quercetina si trova ad alti livelli, soprattutto nelle cipolle e nelle mele.
I risultati della ricerca suggeriscono che la presenza di questi antiossidanti in realtà aumenta l’efficacia di Nrf2, che dovrebbe a sua volta rendere le cellule più resistenti ai danni, compresi i danni ossidativi. “La nostra salute trae vantaggio dalla velocità di movimento di  Nrf2 che sorveglia la salute delle cellule e aumenta quando è più necessario, cioè, quando le cellule sono sotto minaccia “, ha detto Thornalley.
I ricercatori hanno già utilizzato i loro risultati per sviluppare nuovi integratori alimentari, che sono attualmente in fase di sperimentazione per la loro efficacia nel ridurre il diabete e il rischio di malattie cardiache.
La quercetina è un flavonoide e appartiene al gruppo dei flavonoli.

Scientists have long known that sulforaphane and quercetin are powerful antioxidants rich benefits for our health. Now researchers at the University of Warwick in the UK, have discovered the mechanism by which these substances activate a special protein that protects and promotes the health of the cells.

The study was published in the journal Antioxidants & Redox Signaling.

 The search results can lead to the identification and development of new drugs or supplements to prevent chronic diseases such as diabetes and heart disease. The research has focused on the activity of a protein known as Nrf2, which is constantly moving in and out from the nuclei of human cells in order to monitor their health and vitality. When the health of a cell is threatened, Nrf2 begins to oscillate in and out of the cell faster to stimulate the defense mechanisms of cells and lead to an increase in cellular antioxidant levels.

"The way that Nrf2 works is very similar to the sensors in electronic devices that rely on the continued appreciation of their environment to provide an adequate response," explained Prof. Paul Thornalley, author of the study.

In the new study, the researchers found that, under normal circumstances, Nrf2 oscillates in and out of a given cell nucleus, to the rhythm of a swing every 129 minutes. If the cell is exposed to chemicals, antioxidants sulforaphane and quercetin, they increase the rate of oscillation of Nrf2 up to 80 minutes for each oscillation.

Sulforaphane is an antioxidant that is found in abundance in broccoli, while the quercetin is found at high levels, especially in onions and apples.

The research results suggest that the presence of these antioxidants actually increases the effectiveness of Nrf2, which in turn should render the cells more resistant to damage, including oxidative damage. "Our health benefits from the Nrf2 movement speed that monitors the health of the cells and increases when it is most needed, ie, when the cells are under threat," said Thornalley.

The researchers have already used their findings to develop new food supplements, which are currently being tested for their effectiveness in reducing the risk of diabetes and heart disease.

Quercetin is a flavonoid and belongs to the group of flavonols.
